How to rate coffee and remember what you love.

You do not need a barista vocabulary to keep a useful coffee journal. Start with one question: would I order or brew this again?

Start with the cup you actually drink

Record the drink and the café or beans. A flat white and a filter coffee are different experiences, so compare like with like when you can. Note whether you had milk or sugar if that helps you remember the cup. Rate your enjoyment, rather than trying to guess what a professional judge would score.

Choose a rating scale you can repeat

Use these personal anchors as a starting point. They are a journalling suggestion, not a professional cupping standard:

  • 1 star: I did not enjoy this cup.
  • 2 stars: Some good qualities, but I would choose something else.
  • 3 stars: Enjoyable; I would drink it again.
  • 4 stars: A favourite I would seek out.
  • 5 stars: Exceptional for my taste; a cup to remember.

A consistent scale is more useful than false precision. Your preferences can change.

Write tasting notes in ordinary words

Try a few sips as the coffee cools enough to drink comfortably. What does it remind you of: chocolate, nuts, citrus or berries? Is the texture light, creamy or syrupy? Is the finish pleasant? One or two honest observations are enough.

For example: “Flat white, chocolate and caramel, creamy, would order again.” A flavour note describes your impression; it does not mean the coffee contains that ingredient.

For home brews, save enough to repeat it

Keep the beans, brew method, dose, water or espresso yield, grind setting and brew time with your notes. When experimenting, change one variable at a time and compare the result.
